"Our Identity in Christ
God says, I am..."

Praise the Lord for some sunshine today!! It definitely boosts our spirits and gives us hope that spring is on the way!


Do you need hope ? Jesus Christ is our hope - our hope for today and whatever the future holds. 


As a ministry, we have days in which we struggle to understand things that are happening.


 May our hope be in Him! May we constantly point our students back to the truths found in God’s Word.

 
Our prayer is that we help them navigate the struggles in their lives through those truths. Yes, we acknowledge what is happening and how we are feeling, but ultimately, our belief and hope is in God!!


 In Nehemiah 1:5-11, we see Nehemiah’s prayer - wow! His faith is rock solid!


 He approaches God in humility, not just confessing his sin, but the sin of his family and even the sin of the remnant of Israel. He knows God’s Word and acknowledges that God is his source of help. 


Today I encourage you to find hope in God! Dig into the Word! Cling to the promises of God, find your hope in Him today! Walk in the Word today!

Broccoli Cheddar Soup
 

Ingredients

  • 4 tbsp butter
  • 1/2 medium onion, chopped
  • 2-3 cloves of garlic, minced
  • 4 tbsp all purpose flour
  • 2 cups chicken or vegetable stock
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp paprika or ground nutmeg (optional)
  • 3 cups broccoli florets
  • 1 large carrot, finely chopped
  • 2 cups half and half
  • 2 cups shredded cheddar cheese

Directions

  • Melt butter in a large dutch oven or pot over medium-high heat. Add the onion and cook 3-4 minutes or until softened and light gold. Add the garlic and saute for another minute.
  • Add flour and whisk for 1-2 minutes or until the flour begins to turn golden in color. Pour in the chicken stock, broccoli florets, carrots and seasoning. Bring to a boil, then reduce heat to medium-low and simmer for 15 minutes or until broccoli and carrots are cooked through.
  • Stir in half and half and cheddar cheese and simmer for another minute. Taste and adjust seasoning if needed.
  • Pairs well with toasted bread.

Crispy Chicken & Mashed Potato Casserole
 

Ingredients:

  • 5-6 cups mashed potatoes
  • 1 cup corn
  • 1 cup shredded cheddar cheese
  • 8 breaded chicken tenders
  • Brown gravy packet 
 

Directions

  • Preheat oven to 400 degrees 
  • Let chicken tenders unthaw slightly 
  • Spread warm mashed potatoes into the bottom of a greased 9x13 casserole dish
  • Top with corn and cheese
  • Slice the chicken strips into desired size pieces and top the casserole dish with them
  • Bake uncovered for 20 - 25 minutes
  • Prepare the gravy on the stove top while the casserole finishes baking
  • Drizzle desired amount of gravy over the casserole and serve
